The Best Chocolate Cake EVER!

So this is for my students. After searching the web for an easy chocolate cake, and only finding complicated recipes, I decided to make up my own. And I promise, this is the easiest, and best cake EVER! Mine came out slightly undercooked (because I like it that way) which is why I've left the bottom of the cake form on this time. But the cake was just so yummy. Moist and light, yet still dense and rich. Oh so so good.

Here it goes:

2 cups self raising flour
1 cup caster sugar
4 tablespoons baking cocoa
pinch of salt
4 eggs
400g butter, softened
1/2 cup milk

Pre-heat the oven to 170 degrees. Grease and flour a cake tin. In a large bowl, mix all the dry ingredients. Add in the eggs, mix. Add in the butter, mix. Add the milk, mix. The batter was still pretty stiff by this time, I had to really scrape down the beaters for quite a while. Pour into prepared cake tin, pop into preheated oven and bake for around 40 minutes.

For the icing:

2 tablespoons baking cocoa
2 tablespoons icing sugar
100g butter
milk

Put the cocoa, icing sugar and butter into a pan over the heat. Stir constantly, and add milk for desired consistency. Spread icing over cake! Dust with icing sugar if desired. I served my cake with a strawberry coulis (strawberries, icing sugar and lemon, heated and then blended) and whipped cream. At the risk of repeating myself, it was YUM.
