Perhaps not the greatest photo I have ever taken, but I was all very excited about my fabulously sweet sweet corn. Excited enough to post this photo that makes my hand look like I am an 80 year old woman. Oh well, you know what they say. Wrinkly hands, large brain.

So this is not quite my first corn for a while, but it's most certainly been the tastiest. This variety is called Golden Bantam, an heirloom variety from Eden Seeds. Only 7 weeks ago it was just a little tacker, in the second photo here, so it's really grown quite quickly. These two are the best cobs I've had so far, the ears are sweet and fresh, and really lovely and light to eat.
In my humble opinion, freshly picked corn doesn't seem to fill you up as much as supermarket corn. I have read that the moment sweet corn is picked, the sugars start transforming into starch, so you should set the water onto the boil before you trundle out to the garden.
Which is exactly what we did.

They look like perfect examples - so regular! I don't understand the term "liitle tacker" though.. I think that a lot of the "sweet corn" that you buy in the supermarket may be more like "maize" - not so sweet at all, but very starchy.
S w e e t! Well done yet again Ali. Your garden prowess know no boundaries!! I am very impressed with these cobs and am now tempted to try this variety. We have grown corn (a lot) and with very meagre results. I've heard that about corn too - to virtually run from the garden into the saucepan. Makes you wonder about the supermarket stuff doesn't it. cheers Wendy

I think that how long it takes the sugars to turn to starch depends a lot on the variety - I've noticed that even Diggers sell hybrid sweet corn varieties as they are bred specifically to stop this happening. Of course being organised enough to boil the water negates the need for hybridisation completely - fortunately for the corn breeders much of the world is completely disorganised....
Oh I didn't know that Liz, and of course a lot of people would not have the room to grow their own sweet corn - I've yet to see it become popular for balcony gardens! The bicolour corn I have in is a hybrid variety called Incredible, we haven't had any yet and I am really interested to see how it compares to the heirloom varieties.
I really have planted a lot of corn. I am attempting to grow it all year round (which I have been told can be done in Brisbane) and am planting successive crops every month or so. It is so hot here at the moment though that I'm not sure I'm going to be able to grow anything at all over the summer!
Beeyootiful. We grew quite a lot last year, but it was never quite as awe-inspiring as we hoped, so we're having a break this year. Will try the Golden Bantam variety though - thanks for the headsup and doing all the seed testing for us.. :)
That picture makes me salivate! Fresh corn YUM YUM. Was interesteding reading about the corn... Will keep in mind. I am hoping mine grow and produce as good crop as yours!
Ooo Celia - the pressure! I hope I labelled that corn correctly. For some reason, corn is something I find really easy to grow. My next challenge is trying to grow it throughout the year here, which I have been assured by several people can be done. Let's see hey.

Harvested ALL my corn yesterday as it was clear that I was not the only one who was interested in this sweet perfection...boiled, blanched and into the freezer. Summer in Brisbane, is it too hot, am I enticing ALL the local caterpillars??
